武夷岩茶、武夷红茶、政和白茶与地方特色小食的风味适配度探究OA
Exploration of the Flavor Compatibility of Wuyi Rock Tea,Wuyi Black Tea,Zhenghe White Tea and Local Specialty Snacks
通过感官审评探究武夷茶(武夷岩茶、武夷红茶)和政和白茶与清甜、咸鲜、油甜3种风味类型的6款南平市特色小食的风味适配度,结果表明,作为茶点的小食风味需偏清淡,同时消费者本身对小食的喜好度也会影响茶与小食的组合;清甜风味的小食与武夷岩茶、武夷红茶、政和白茶适配度最高,尤其是搭配政和白茶可以增加清爽的口感,搭配武夷红茶、武夷岩茶有较好的协调度;油甜风味的小食,与武夷红茶、武夷岩茶也有较好的适配性,能够起到减甜解腻的作用;此外,先饮茶后吃小食的顺序对茶叶品饮的体验感影响较小.
Through questionnaires and sensory evaluations,this study explored the flavor compatibility between Wuyi Rock Tea,Wuyi Black Tea,Zhenghe White Tea and six snacks of three flavor types:sweet,savory,and oily-sweet.The results show that snacks as tea accompaniments should have mild flavors,and consumers' personal pref-erences for snacks also affect tea-snack pairings.Snacks with sweet flavors have the highest compatibility with Wuyi Rock Tea,Wuyi Black Tea and Zhenghe White Tea,particularly when paired with Zhenghe White Tea,as this enhances the sense of refreshment.Pairings with Wuyi Black Tea and Wuyi Rock Tea also demonstrate good harmo-ny.Oily-sweet snacks also show good compatibility with Wuyi Black Tea and Wuyi Rock Tea,helping to reduce sweetness and greasiness.Additionally,the study found that the order of consumption(tea or snacks first)had little impact on the tea-tasting experience.
