文章通过电感耦合等离子体质谱法(ICP-MS),分析不同产地、品种的18个茶叶样品中砷、铅、镉元素在不同浸泡次数、温度、时间的条件下茶汤中重金属元素的溶出规律.试验结果表明,重金属元素的浸出率随着茶叶浸泡次数的增加而减小,且第二、第三泡的浸出率要明显小于第一泡;重金属元素的浸出率随着浸泡温度的增加而升高,于100 ℃时达到最高;重金属元素的浸出率随着茶叶浸泡时间的增加而升高,于30 min时浸出率的变化趋势达到最高.参与检测的茶叶样品均符合《食品安全国家标准食品中污染物限量》(GB 2762-2022)中对重金属元素含量的要求,属于合格产品.

Inductively coupled plasma mass spectrometry(ICP-MS)was used to analyze the leaching patterns of heavy metal elements such as As,Pb,and Cd in 18 tea samples from different regions and varieties under different soaking times,temperatures,and times in tea soup.The experimental results showed that the leaching rate of heavy metal elements decreased with the increase of tea soaking times,and the leaching rate of the second and third soak-ing solutions was significantly lower than that of the first soaking solution;The leaching rate of heavy metal ele-ments increases with the increase of soaking temperature,reaching its highest at 100 ℃;The leaching rate of heavy metal elements increases with the increase of tea soaking time,and the trend of leaching rate reaches its highest at 30 minutes.The content of heavy metal elements in the tea leaves participating in the testing meets the standard re-quirements of GB 2762-2022,and poses less threat to human health.
