Screening of probiotics suitable for Codonopsis pilosula fermentation

为探究不同益生菌对党参发酵效果的影响,本试验以党参作为发酵原料,通过活菌数、pH、乳酸含量、阿魏酸含量、粗蛋白质含量等指标分析,筛选适宜党参发酵益生菌.结果表明:适宜党参发酵的乳酸菌为BLCC2-0410、BLCC2-0126,发酵 48 h,活菌数均能达到 108 CFU/g,乳酸产量分别为 8.33、7.09 g/kg,阿魏酸产量分别为45.05、42.16 mg/kg;适宜党参发酵的酵母菌为BLCC4-0077,发酵 48 h,活菌数可达 108 CFU/g,粗蛋白质含量为17.74%;适宜党参发酵的混菌组合为BLCC2-0410+BLCC4-0077,发酵 48 h,乳酸菌活菌数可达 108 CFU/g,乳酸、阿魏酸、粗蛋白质含量分别为 7.59 g/kg、38.74 mg/kg、17.29%.

In this experiment,Codonopsis pilosula was fermented by Lactic acid bacteria and yeast in v itro.By analyzing the indexes such as the number of viable bacteria,pH,lactic acid content,ferulic acid content and crude protein content,two strains of Lactic acid bacteria,one strain of yeast and one group of compound probiotics were screened out.The Lactic acid bacteria suitable for Codonopsis pilosula fermentation were BLCC2-0410 and BLCC2-0126.After 48 h fermentation,the number of viable bacteria could reach 108 CFU/g,and the lactic acid production was 8.33,7.09 g/kg,and the ferulic acid production was 45.05 mg/kg and 42.16 mg/kg,respectively.The suitable yeast for Codonopsis pilosula fermentation was BLCC4-0077.After 48 h fermentation,the number of viable bacteria could reach 108 CFU/g and the crude protein content was 17.74%.The suitable combination of mixed bacteria for Codonopsis pilosula fermentation was BLCCC2-0410+BLCCC4-0077 after 48 h fermentation,the number of viable Lactic acid bacteria could reach 108 CFU/g,and the contents of lactic acid,ferulic acid and crude protein were 7.59 g/kg,38.74 mg/kg and 17.29%respectively.
