为探究黑水虻幼虫(Hermetia illucens larvae,HML)对北京鸭生长性能、屠宰性能与肌肉品质的营养,试验将120只体质健康的7日龄北京鸭幼鸭随机分成5组,分别饲喂100%配合饲料(对照组)、90%配合饲料补饲10%HML(HML10组)、80%配合饲料补饲20%HML(HML20组)、70%配合饲料补饲30%HML(HML30组)和60%配合饲料补饲40%HML(HML40组),饲养32 d后进行了样品采集与指标检测.结果表明:与对照组相比,HML30组肠指数显著提高(P<0.05).HML30组腿重、腿肌重、腿比率和腿肌率均显著高于对照组(P<0.05).与对照组相比,HML20组、HML30组和HML40组的胸肌粗蛋白含量均显著升高(P<0.05).另外,与对照组相比,HML30组胸肌胶着性显著升高(P<0.05),HML10组、HML20组、HML40组胸肌咀嚼性和内聚性均显著升高(P<0.05),HML10组、HML30组、HML40组胸肌弹性均显著升高(P<0.05).综合分析表明,在北京鸭配合饲料中补饲≤30%的HML,既不影响鸭的生长,又可提高鸭的屠宰性能、鸭肉的营养品质与质构品质.

This experiment was conducted to investigate the effects of dietary supplementation with Herme-tia illucens larvae(HML)on growth performance,slaughter performance and muscle quality of Pekin ducks.A total of 120 healthy 7-day-old Pekin ducks were selected and randomly divided into 5 groups.The five groups of ducks were fed with 5 kinds of diets respectively:100%commercial diet(control group),90%com-mercial diet supplemented with 10%black soldier fly larvae(HML10 group),80%commercial diet supple-mented with 20%black soldier fly larvae(HML20 group),70%commercial diet supplemented with 30%black soldier fly larvae(HML30 group),and 60%commercial diet supplemented with 40%black soldier fly larvae(HML40 group).After 32 days'feeding,the growth performance,slaughter performance and muscle quality of Pekin ducks were determined respectively.The results showed that the intestinal index in the HML30 group was significantly increased compared to the control group(P<0.05).Leg weight,leg muscle weight,leg ratio and leg muscle rate in the HML30 group were significantly higher than those in the control group(P<0.05).The crude protein content of pectoral muscle of the HML20,HML30 and HML40 groups was significantly elevated compared to the control group(P<0.05).Additionally,compared with the control group,the adhesiveness of breast muscle in the HML30 group was significantly higher(P<0.05),while the chewiness and cohesiveness of breast muscle in HML10 group,HML20 group,HML40 group were significantly increased(P<0.05).The springiness of breast muscle in the HML10,HML30 and HML40 groups was also significantly enhanced(P<0.05).In summary,the results demonstrated that supplementing≤30%HML in the diet did not affect the growth performance,while improving slaughter performances,nutritional quality,and texture quality of duck meat of Pekin ducks.
