鱼虾混养可提升资源利用率及产量,但对其品质与加工性能影响的研究较少.本研究通过对比淡水环境中南美白对虾单养与草鱼混养2 种模式,采用独立样本T检验分析池塘水质、肌肉品质及加工特性差异,以期为优化对虾营养品质和加工性能提供理论依据.研究结果显示,混养组总氮浓度在中后期平均含量0.09 mg/L显著低于单养组0.19 mg/L(P<0.05);混养组叶绿素a浓度在后期28.00 μg/L高于单养组4.67 μg/L(P<0.05);混养组对虾(∑DAA/∑TAA)全程高于单养组8.20%~12.60%(P<0.05);混养组对虾(∑PUFA)在后期3.14 g/100 g显著高于单养组2.00 g/100 g(P<0.05);在养殖后期混养组对虾蒸煮损失率27.31%低于单养组29.67%(P<0.05).混养较单养模式除了显著改善养殖生态环境,还可显著提高养殖效率、提升营养价值和加工特性,研究结果可为养殖高品质虾类提供科学有效的参考.[中国渔业质量与标准,2025,15(1):37-47]。

The integration of fish and shrimp in a mixed culture system can improve the utilization efficiency of re-sources and increase production yields.However,limited research has been conducted on its effects on the quality at-tributes and processing performance of aquatic products.This study aimed to investigate the impact of two different breeding systems—a monoculture of Penaeus vannamei and a mixed culture involving Ctenopharyngodon idellus—in a freshwater environment on water quality parameters,muscle quality characteristics,and processing properties.Differ-ences between the two systems were statistically analyzed using an independent samples t-test.The findings are ex-pected to contribute to theoretical support for optimizing the nutritional value and processing performance of cultured shrimp.The results of the study indicated that the average content of total nitrogen concentration in the mixed culture group was 0.09 mg/L in the middle and late stages,which was significantly lower than that in the monoculture group(0.19 mg/L,P<0.05).Additionally,the concentration of chlorophyll a in the mixed culture group was 28.00 μg/L in the later stage,higher than that in the monoculture group(4.67 μg/L,P<0.05).Regarding mus-cle composition,The ratio of(∑DAA/∑TAA)of shrimp in the mixed culture group was consistently higher than that in the monoculture group by 8.20%-12.60%throughout the whole process(P<0.05).Furthermore,The content of(∑PUFA)of shrimp in the mixed culture group was3.14 g/100g in the later stage,significantly higher than that in the monoculture group(2.00 g/100g,P<0.05).In terms of processing characteristics,the cooking loss rate of shrimp in the later stage of breeding in the mixed culture group was 27.31%,lower than that in the monoculture group(29.67%,P<0.05).Comparing with the monoculture mode,the mixed culture mode can not only signifi-cantly improve the breeding ecological environment,but also significantly improve the breeding efficiency,as well as the nutritional value and processing characteristics.The research results can provide a scientific and effective refer-ence for breeding high-quality shrimp.[Chinese Fishery Quality and Standards,2025,15(1):37-47].
